Description: Chinese Keys is a tropical perennial herbaceous plant (Boesenbergia rotunda) in the ginger family that grows about 50 – 70 cm tall with basal leaves that die back in frost and spreads from rhizomes. It’s cultivated mainly for its thick, succulent rootlets—sometimes called fingerroot—that are widely used in Southeast Asian cooking, either added raw or cooked in salads, soups, curries or made into pickles; young leaves and shoots are also edible. The roots are prized for their aromatic, spicy flavour, and the plant can be grown in pots or garden beds in warm, moist, well-drained soil, thriving in tropical and subtropical climates.
